Ingredients
  • 2 broccoli heads or 1 Lb. broccoli flowerets
  • 1 teaspoon salt
  • 3 tablespoons minced cilantro
  • 2 scallions, minced
  • 3 tablespoons rice vinegar
  • 1 tablespoon honey, sugar or 1 package non-caloric sugar replacement
  • 1 tablespoon minced pickled ginger
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon dark sesame oil
  • 1 tablespoon olive oil
Method
  • Place broccoli flowerets in a sieve. Pour 4 cups of boiling salted water over all the broccoli. Drain and cut into 1⁄2 inch pieces.
  • Place cilantro, scallion, vinegar, honey, ginger, salt, pepper and sesame oil in a bowl and mix. Add broccoli, mix and refrigerate for an hour or overnight.
  • Add the olive oil and serve.
