Ingredients
  • 8 oz white fish
  • 3 limes
  • 1/2 c red onion
  • 2 tbsp green or lime vinaigrette
  • 1/2 cup diced zucchini
  • 1 cup Chinese cabbage
  • pinch salt
  • 2 tbsp cilantro Hot pepper
  • 1/2 c tomatoes
  • Lime Vinaigrette (pg. 57)
  • 1 tablespoon lime juice
  • 1 tablespoon minced pickled ginger
  • 1 tablespoons minced cilantro
  • ¼ teaspoon honey
  • 1 tablespoon water
  • ¼ teaspoon salt
  • 2 tablespoons oil
Method
  • Cut fish into thin slices or dice. Add the juice of the 3 limes and red onions and set aside; set aside for 10 minutes for a TIRADITO and 1 hour for totally cooked ceviche.
  • In another bowl mix the rest of the ingredients.
  • Remove any excess lime from the fish. Transfer the fish and onion to the bowl with the rest of the ingredients.
  • Divide into 3 cups, serve each with 2 crackers.
